Lemon Butter Chicken

Lemon Butter Chicken in the crockpot is what’s for dinner!😋 I’ve never made this particular recipe before, so I am anxious to taste it tonight and see what I think. I did however taste the sauce as I was preparing the dish to go in the crockpot and the sauce itself was AMAZING ☺️ I plan to make up a nice big green salad to go along with it, as well as some cooked greens (yes, I’m on a special “fun” diet🤣). The crockpot we have is this one:

I would say I have been quite pleased with this crockpot and find that it has cooked evenly and actually quite quickly, so I tend to not put my recipe in until midday to noonish and then I know it will be done by 5pm. I do prefer to spray the crockpot with nonstick cooking spray as it prevents the cooking food from sticking to the inside when it comes time to dish the food out. Another trick is to line the inside of the crockpot with foil and spray that instead of the pot directly. That allows for quicker clean up after mealtime as you just have to lift the foil out of the pot to clean it. So, the recipe is probably what you really want, right?!😂 Well here you go…

Lemon Butter Chicken

3 large chicken breasts

1 can coconut milk

1 cup chicken broth

4-5 TBSP. Butter (melted)

Juice of 1 whole Lemon

1/2 TBSP. Paprika

1 TSP Black Pepper

1/4 TSP Salt

1/2TBSP Thyme

Dash Cayenne

Fresh Spinach Leaves

Set chicken breasts in crockpot. Mix all other ingredients in separate bowl. Pour over crockpot and cook on low 6 hours. During last half hour put in fresh spinach leaves and stir. Allow to finish on warm until you’re ready to serve. Serve over cauli-rice, white or brown rice, and sprinkle with Parmesan Cheese.
